One of my affirmations that I read every morning is:
I eat in a manner that will build my cells and help me express great health while allowing myself to not feel guilty when I occasionally deviate.
Nutrition is very important to me and because I am selective in when I indulge in non-nutritive food and because breakfast is the most important meal of the day, I am excited to share with you one of my new found breakfast foods: Chia Pudding.
1 can coconut milk
4 Tablespoons of Chia Seeds
Fruit of choice
Pour the can of coconut milk in a container that you can put a lid on. Add the chia seeds and a little bit of fruit ( my first batch I used about 8-10 raspberries)
Mix it all up and put the lid on it. It will expand slightly so make sure there is room in the container.
Put it in the fridge before you go to bed and it will be ready for you first thing in the morning.
Coconut milk and Chia Seeds are packed with healthy fats and nutrients. A 1 ounce (28 grams) serving of chia seeds contains:
- Fiber: 11 grams.
- Protein: 4 grams.
- Fat: 9 grams (5 of which are Omega-3s).
- Calcium: 18% of the RDA.
- Manganese: 30% of the RDA.
- Magnesium: 30% of the RDA.
- Phosphorus: 27% of the RDA.
- They also contain a decent amount of Zinc, Vitamin B3 (Niacin), Potassium, Vitamin B1 (Thiamine) and Vitamin B2.
So enjoy this healthy treat for breakfast or dessert and build your cells so you can express great health without needing to feel guilty.
